  • 8 oz white chocolate, chopped Chop into small pieces for easier melting.
  • 1/2 cup heavy cream Heat until just simmering.
  • 1 tablespoon fresh lemon zest Increase for a more intense lemon flavor.
  • 2 tablespoons fresh lemon juice Fresh juice is highly recommended.
  • Powdered sugar or lemon sugar for dusting Optional for finishing touch.
  • Optional: additional white chocolate for dipping For an extra layer of flavor.
  • Optional: crystallized lemon bits for topping For a gourmet touch.

Preparation

  • In a saucepan, heat the heavy cream until just simmering.
  • Pour the hot cream over the chopped white chocolate in a bowl.
  • Let the mixture sit for a few minutes, then stir until smooth and fully combined.
  • Mix in the lemon zest and lemon juice until everything is well incorporated.
  • Chill the mixture in the refrigerator for about 1-2 hours or until it firms up.
  • Once chilled, scoop out small portions of the mixture and roll them into bite-sized spheres.
  • Dust the truffles with lemon sugar or dip them in melted white chocolate, and top with additional lemon zest or crystallized lemon bits.
  • Allow them to set in the refrigerator until firm, then serve immediately or package them for gifting.

Notes

Store in an airtight container in the refrigerator for up to a week. They can be frozen if layered with parchment paper to prevent sticking.
