  • 1/2 cup heavy cream Heat until just simmering.
  • 1 tablespoon fresh lemon zest Freshly zest the lemon for best aroma.
  • 2 tablespoons fresh lemon juice Can substitute with lime or orange juice.

For dusting and topping

Preparation

  • In a saucepan, heat the heavy cream over medium heat until it’s just simmering.
  • Remove the saucepan from the heat and pour the hot cream over the chopped white chocolate in a mixing bowl.
  • Let the mixture sit for about 1 minute to allow the chocolate to melt, then stir until the mixture is smooth and well combined.
  • Add the fresh lemon zest and lemon juice to the chocolate mixture, combining well.
  • Cover the bowl with plastic wrap and refrigerate the mixture for about 2 hours, or until it becomes firm.

Rolling and Serving

  • Once it has set, use a teaspoon to scoop out small portions of the truffle mixture and roll them into bite-sized spheres.
  • Dust the truffles with lemon sugar or dip them in melted white chocolate if you prefer.
  • For an extra touch, garnish the truffles with additional lemon zest or crystallized lemon bits.
  • Allow the truffles to set before serving. Enjoy!

Notes

Store the truffles in an airtight container in the refrigerator for up to a week. Let them sit at room temperature before serving for best flavor. Use disposable gloves if rolling the truffles gets messy. Experiment with toppings for custom flavors.
