  • 1 tbsp sesame oil
  • 2-3 cloves garlic, finely grated
  • 1 tbsp gochujang (Korean chili paste) Adjust quantity for desired spice level
  • 250 ml water
  • 1 packet ramen noodles
  • 1 1/2 tsp soy sauce
  • 1 squeeze honey
  • 70 g grated mozzarella Use a cheese that melts well
  • 1 fried egg (for topping) Optional for serving
  • 1 spring onion (chopped, for garnish) Optional for garnish
  • sesame seeds (for garnish) Optional for garnish

Preparation

  • Begin by heating a pan over medium heat. Add 1 tablespoon of sesame oil.
  • Finely grate the garlic cloves and add them to the heated pan. Fry gently for a couple of minutes until fragrant.
  • Add in the gochujang and fry for another minute, stirring well to combine.
  • Pour in 250 ml of water and add the ramen noodles. Cook according to package instructions, adjusting the water if necessary until the noodles are soft.
  • Once the noodles are cooked, season them with soy sauce and a squeeze of honey. Stir in the grated mozzarella until melted and creamy.
  • Plate your spicy ramen, top it with a fried egg, sprinkle with chopped spring onions, and finish with sesame seeds.

Notes

If you have leftovers, store the ramen in an airtight container in the refrigerator. Best consumed within 1-2 days. Reheat gently in a pan with a splash of water to restore moisture before serving again.
