  • 1 teaspoon baking powder
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup water (with tomatillo shells if available) Use tomatillo shells if available for added flavor.

Preparation

  • In a large bowl, mix together the all-purpose flour, baking powder, sugar, salt, and cinnamon.
  • Gradually add the water to the dry ingredients until the mixture forms a dough.
  • Knead the dough on a floured surface until it is smooth.
  • Divide the dough into small balls and let them rest for about 10-15 minutes.
  • On a clean surface (or even your knee), stretch each ball of dough as thinly as possible without tearing.

Cooking

  • Heat oil in a deep pan until it’s hot enough for frying.
  • Carefully add each stretched piece of dough to the hot oil and fry until golden brown and crispy on both sides.
  • Remove the fritters from the oil and drain them on paper towels. Serve warm.

Notes

Knee fritters should be served fresh and warm. Consider pairing them with a dipping sauce like salsa or a zesty yogurt dip. For storage, keep leftovers in an airtight container at room temperature for up to a day or freeze for a month.
