  • 1.5 oz white rum or coconut rum
  • 1 oz key lime juice, fresh preferred For best flavor, use fresh juice.
  • 1 oz cream of coconut, such as Coco López
  • 1 oz pineapple juice
  • 1 oz heavy cream or half-and-half
  • 2 tbsp cream cheese, softened
  • 1-2 tbsp powdered sugar Adjust to taste.
  • 1 cup ice Crushed or cubed.

Garnishes

  • 1 serving whipped cream For topping.
  • 1 tbsp graham cracker crumbs For rimming and topping.
  • 1 slice lime wheel or wedge For garnish.
  • 1 tbsp toasted coconut flakes Optional topping.

Preparation

  • Start by rimming a glass with key lime juice. Dip the edge into graham cracker crumbs to create a 'pie crust' effect. Set this glass aside.

Blending the Cocktail

  • In a blender, combine the white rum (or coconut rum), key lime juice, cream of coconut, pineapple juice, heavy cream, softened cream cheese, powdered sugar, and ice. Blend everything together until smooth and creamy.
  • Taste your mixture and adjust the sweetness or lime flavor as needed.

Assembly and Serving

  • Pour the blended mixture into your prepared glass.
  • Top with a dollop of whipped cream and sprinkle graham cracker crumbs and toasted coconut on top if desired.
  • Garnish with a lime wheel or wedge, then serve immediately.

Notes

Serve chilled. Best enjoyed fresh, but can be stored in the refrigerator for a short period. Shake or stir well before serving if stored.
