  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced chicken and season with garlic powder, salt, and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  • Stir in the broccoli florets and continue cooking for an additional 5 minutes, allowing the broccoli to soften slightly.
  • Add the rice and chicken broth to the skillet. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes until the rice is thoroughly cooked.
  • Remove the skillet from heat and stir in the shredded cheese until it’s fully melted and creamy.
  • Enjoy Hubby’s Bliss hot, straight from the skillet!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, simply place in the microwave or on the stovetop until warmed through. If you’d like to keep it fresh for longer, consider freezing the dish in a freezer-safe container for up to 3 months.
