Ingredients
  

For the Pork Chops

  • 4 pieces boneless pork chops
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons unsalted butter

For the Mashed Potatoes

  • 2 lbs russet potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 3 tablespoons unsalted butter
  • Salt and pepper, to taste

Preparation of Pork Chops

  • Season both sides of the pork chops with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the pork chops and sear them for about 3–4 minutes on each side until they are golden brown and cooked through.
  • Once done, remove the pork chops from the skillet and set them aside.

Making the Honey Garlic Sauce

  • In the same skillet, lower the heat to medium.
  • Add the two tablespoons of unsalted butter and minced garlic. Cook for about 1 minute until the garlic is fragrant.
  • Stir in the honey, soy sauce, apple cider vinegar, and red pepper flakes (if using).
  • Let the sauce simmer for about 2–3 minutes until it slightly thickens.

Combining

  • Return the pork chops to the skillet and spoon the glaze over the top.
  • Allow it to simmer for another 2 minutes to ensure the chops are fully coated and heated.

Preparing the Mashed Potatoes

  • While the pork is cooking, boil the peeled and cubed potatoes in salted water for 15–20 minutes or until they are tender.
  • Once tender, drain the potatoes and return them to the pot.
  • Add the remaining 3 tablespoons of butter and half a cup of milk.
  • Mash until they are smooth and creamy, and season with salt and pepper to taste.

Notes

Ensure the pork chops are at room temperature before cooking for even cooking. Experiment with adding different herbs like thyme or rosemary to the honey garlic sauce for extra flavor. Use a potato masher or a ricer for the creamiest mashed potatoes.
