Ingredients
  

For Marinating

  • 8 pieces chicken drumsticks or thighs
  • 1 cup buttermilk Can substitute with regular milk, though buttermilk adds flavor.

For Coating

  • 1.5 cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 0.5 tsp dried basil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne Optional for extra heat.

Instructions
 

Marinating

  • Place chicken drumsticks or thighs in a dish and pour in buttermilk. Marinate for at least 2 hours or overnight in the refrigerator.

Preparation

  • Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper and lightly grease it.
  • In a bowl, combine flour, paprika, garlic powder, onion powder, dried thyme, dried basil, salt, black pepper, and cayenne (if using).

Coating and Baking

  • Remove chicken from buttermilk. Shake off any excess buttermilk and coat each piece thoroughly in the seasoned flour mixture.
  • Arrange coated chicken pieces on the prepared baking sheet. Lightly spray with olive oil or brush with melted butter for a crispy finish.
  • Bake for 40–45 minutes, flipping halfway through, until golden and cooked through.

Notes

Make sure to marinate the chicken long enough for the juice to soak in and enhance the flavor. For even crispier chicken, spray a bit more olive oil on the coated chicken before baking. Feel free to adjust the spices based on your preferences. Add more cayenne for extra heat or skip it altogether.
