  • 2 blocks cream cheese Make sure it's at room temperature for easier melting.
  • 2 cups unsweetened almond milk Adjust thickness by adding more or less.
  • 1 cup water Adjust based on desired soup consistency.
  • 2 cubes chicken bouillon Adds flavor to the soup.
  • to taste chopped onions Can substitute with onion flakes.
  • a pinch garlic powder

Vegetable Ingredients

  • 2 bags frozen broccoli Fresh broccoli can be used, steamed until tender.

Optional Toppings

  • to taste shredded cheese For serving, optional.

Preparation

  • Begin by melting the cream cheese in a large pot over medium heat.
  • Once melted, pour in the almond milk and water. Stir well and bring the mixture to a good boil.
  • Add the chicken bouillon cubes, chopped onions, and a pinch of garlic powder. Stir everything together until well combined.
  • Steam the broccoli in the microwave until it is tender.
  • Add the steamed broccoli to the pot and stir it into the creamy mixture.

Cooking

  • Let the soup simmer on low heat for about 20 minutes, allowing the flavors to meld together and thickens the soup.
  • Serve hot with a sprinkle of shredded cheese on top, if desired.

Notes

Pair with crusty bread or a fresh salad for a complete meal. Leftovers can be stored in an airtight container for 3-4 days. Reheat on the stove or microwave until hot. Variations include adding carrots or cauliflower, or adjusting the spiciness with red pepper flakes.
