Homemade Banana Bread

Ingredients
  

Wet Ingredients

  • 4 Tbsp salted butter, room-temperature
  • 1/4 cup cooking oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1.5 cups mashed ripe bananas (about 3-4 bananas) Use overripe bananas for best flavor and moisture.
  • 2 large eggs
  • 1 tsp vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour For a healthier version, try substituting half with whole wheat flour.
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp cinnamon

Optional Ingredients

  • 1/2 cup chopped walnuts Optional

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Add the room-temperature butter, cooking oil, granulated sugar, and brown sugar to a mixing bowl. Use a hand mixer or stand mixer to beat the ingredients together until they become light and creamy.
  • Mash the bananas well, then add them to the mixing bowl with the butter and sugar, along with the eggs and vanilla extract. Use the mixer again to beat the ingredients together until smooth.
  • In a separate mixing bowl, stir together the flour, baking soda, salt, nutmeg, and cinnamon until well combined.
  • Pour the flour mixture into the bowl of wet ingredients and fold them together just until combined. Do not overmix.
  • Add the chopped walnuts to the bowl and gently fold to combine again.
  • Grease an 8.5"x4.5" loaf pan with butter or oil, then add the batter and smooth it out evenly into the pan.

Baking

  • Bake the banana bread in the preheated 350°F oven for 60 minutes or until it’s deeply golden brown on top, has a crack down the center, and a toothpick inserted into the middle comes out clean (crumbs are okay, but wet batter is not).

Cooling

  • Allow the loaf to cool for about 5 minutes in the pan, then gently remove it from the pan and allow it to finish cooling on a wire rack.
  • Once cooled, slice, serve, and enjoy!

Notes

You can serve banana bread warm or at room temperature. It’s great on its own, but try adding a smear of butter, cream cheese, or even a drizzle of honey for extra flavor.
