Preparation

  • In a blender or food processor, blend the pistachios until they form a fine powder, being careful not to over-process them into a paste.
  • In a mixing bowl, combine the pistachio powder with Greek yogurt, vanilla protein powder, and almond milk. Stir until smooth and well combined.
  • If using an ice cream maker, place the mixture in the refrigerator for at least 30 minutes to chill.
  • Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions or until it reaches a creamy consistency.
  • Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours to firm up.
