Dry Ingredients

  • 200 g peanuts Chopped
  • 60 g hazelnuts Chopped
  • 30 g pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1 tablespoon sesame seeds
  • 30 g dried cranberries Chopped
  • 200 g oats Use gluten-free oats for a gluten-free version.
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 100 g honey or maple syrup Maple syrup can be used as a vegan option.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the oats, peanuts, hazelnuts, pumpkin seeds, sunflower seeds, sesame seeds, and dried cranberries.
  • In another bowl, combine honey or maple syrup, vanilla extract, cinnamon, and salt.
  • Pour the wet ingredients into the dry ingredients and stir until well combined.
  • Scoop tablespoon-sized portions of the mixture onto a baking sheet lined with parchment paper, flattening them slightly.

Baking

  • Bake for 12-15 minutes, or until golden brown.
  • Let cool before serving.

Notes

Store cookies in an airtight container at room temperature for about a week or freeze for longer storage. You can customize the nuts and dried fruits to your liking. Adding chocolate chips is also an option for a sweeter treat.
