Guacamole

A delicious and creamy avocado dip that is perfect with chips, tacos, and grilled meats. Homemade guacamole allows for flavor customization and is more nutritious than store-bought versions.

Ingredients
  

For the guacamole

  • 2 tbsp finely chopped white onion or red, brown, or yellow
  • 1 tbsp finely chopped jalapeño or serrano chili adjust to taste
  • 1/2 tsp salt plus more to taste
  • 1/4 cup roughly chopped coriander/cilantro leaves
  • 2 medium avocados or 1 very large one
  • Lime juice to taste, typically 1/4 – 1/2 lime
  • 1 ripe tomato optional, peeled, deseeded, and chopped

Preparation

  • Place the onion, jalapeño, salt, and half the coriander on a cutting board. Use a fork to mash until juicy. Alternatively, use a mortar and pestle to grind into a paste.
  • Scrape the mixture into a bowl, add the avocados and the remaining coriander, and mash to your desired consistency.
  • Taste your guacamole and adjust the flavor to your liking. Add more salt, lime juice for a sour kick, or additional chili for extra spiciness.
  • If using tomatoes, stir them through the mixture.
  • Serve your guacamole with corn chips and enjoy!

Notes

Guacamole is best served fresh. For storage, press plastic wrap onto the surface of the guacamole to prevent browning. It can stay fresh in the refrigerator for up to two days.
