Ingredients
  

Main Ingredients

  • 2 grilled chicken breasts (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (sliced)
  • 1/2 medium red onion (thinly sliced)
  • 1/2 cup sweet corn
  • 1 avocado (diced)
  • 2 cups romaine lettuce or mixed greens (chopped)
  • 1/4 cup fresh parsley or cilantro (chopped)

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 clove garlic (minced)
  • Salt & black pepper to taste

Instructions
 

Grilling the Chicken

  • Preheat the grill and season the chicken with salt, pepper, and a drizzle of olive oil.
  • Grill the chicken for about 5-7 minutes per side, or until fully cooked.
  • Let the chicken rest for a few minutes, then dice it into bite-sized pieces.

Preparing the Salad

  • In a large bowl, combine the chopped lettuce, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, sweet corn, diced avocado, and fresh herbs.
  • Add the diced grilled chicken on top of the vegetable mixture.

Making the Dressing

  • In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, minced garlic, salt, and black pepper.

Serving

  • Drizzle the dressing over the salad and gently toss everything together before serving fresh.

Notes

Store any leftover salad in an airtight container in the refrigerator, keeping the dressing separate to avoid wilting. The salad will stay fresh for up to 2 days.
