  • 4 large large flour tortillas
  • 2 cups shredded cooked chicken or beef Use either or a combination of both.
  • 1 can refried beans Canned or homemade.
  • 2 cups shredded cheese Cheddar or a blend works well.
  • 2 cups green enchilada sauce Store-bought or homemade.
  • 1 cup sour cream For topping and serving.
  • 1/4 cup chopped cilantro For garnishing.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Take a large tortilla and layer it with some refried beans, followed by shredded chicken or beef, and a generous amount of cheese.
  • Carefully roll the tortilla tightly and place it seam side down in a baking dish.
  • Repeat the process with the remaining tortillas until the baking dish is filled.
  • Pour the green enchilada sauce over the top of all the burritos.
  • Sprinkle additional cheese on top for extra flavor.
  • Bake in the preheated oven for about 20-25 minutes, or until heated through and the cheese is melted.

Serving

  • Serve warm, topped with sour cream and freshly chopped cilantro.
  • You can plate them individually or serve them family-style in the baking dish, alongside extra sour cream, guacamole, or salsa.

Notes

For best results, use fresh ingredients such as cilantro and quality tortillas. You can also customize the fillings and make them ahead of time.
