Ingredients
  

For the Dough

  • 4.5 cups Unbleached All-Purpose Flour
  • 1.5 tablespoons Dry Yeast
  • 1 cup Whole Milk Heated to 110°F
  • 5 tablespoons Granulated Sugar
  • 2 teaspoons Kosher Salt
  • 0.5 teaspoon Ground Mace
  • 3 Large Eggs
  • 5 tablespoons Unsalted Butter

For the Filling

  • 8 ounces Mascarpone
  • 2 tablespoons Granulated Sugar For filling
  • 1 cup Heavy Cream
  • 0.25 cup Strawberry Jam

For the Glaze

  • 1 cup Powdered Sugar
  • 2-3 tablespoons Strawberry Puree or Jam
  • 1 teaspoon Vanilla Extract

Instructions
 

Preparation

  • Measure all the ingredients for the donuts.
  • In a large bowl, place the flour.
  • Heat the milk to 110°F in a separate measuring cup.
  • Preheat the oven to create a warm proofing environment.

Make the Filling

  • In a food processor, blend freeze-dried strawberries and sugar until fine.
  • Cook in a saucepan with the jam until thick, then let it cool completely.

Dough Preparation

  • In a stand mixer, combine flour, yeast, and sugar. Whisk together.
  • Add half of the warm milk to the flour mixture and mix until there are no lumps. Let it sit for 15 minutes.

Dough Mixing

  • Add the remaining ingredients, except for the butter, into the mixer and mix until combined.

Kneading and Rising

  • Gradually add the butter while kneading until the dough is smooth and elastic.
  • Knead the dough briefly by hand, place it on a floured surface, cover, and let it rise until it doubles in size (about 60 minutes).

Shaping and Frying

  • Divide the dough into 15 pieces, roll each into a ball, and place them on a lined baking sheet to rise again (30 to 45 minutes).
  • Heat oil to 360°F and fry the donuts for about 1 minute per side until golden brown.

Filling and Serving

  • Fill a pastry bag with the strawberry mascarpone mixture and fill each cooled donut.
  • Serve donuts dusted with powdered sugar, drizzled with strawberry glaze, or enjoy plain.

Notes

These donuts are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days. Consider freezing them without the glaze for longer storage. To reheat, microwave them for a few seconds. Make sure the milk is just warm when activating the yeast and be patient during rising times for fluffy donuts. Try different fillings for a unique twist.
