  • 1 pound ground chicken
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced Use freshly minced garlic for the best flavor.
  • 1 egg
  • 1/4 cup milk
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup marinara sauce
  • 1/4 cup mozzarella cheese, shredded

Instructions
 

Preparation

  • Preheat your oven to 375°F. Grease a muffin tin to prevent sticking.
  • In a large bowl, combine the ground chicken, Parmesan cheese, and breadcrumbs.
  • Add the minced garlic, egg, and milk to the mixture. Mix well.
  • Stir in the fresh parsley, dried oregano, onion powder, and season with salt and pepper. Be careful not to overmix the ingredients.
  • Divide the mixture evenly among the muffin tin cups. Press them gently into shape.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
  • Once baked, spoon marinara sauce over each meatloaf and sprinkle with shredded mozzarella cheese.
  • Return to the oven and bake for another 5 minutes, until the cheese is melted.

Notes

If you have any leftovers, place the cooled meatloaves in an airtight container and refrigerate for up to 3 days, or freeze for up to 3 months. Reheat before serving.
