Garlic Bread Leftover Turkey Pot Pie

This comforting dish combines leftover turkey, vegetables, and a rich sauce, all topped off with a golden, garlicky bread crust.

Ingredients
  

For the filling

  • 1 tbsp olive oil
  • 150 g mushrooms (sliced 1/2cm / 1/5" thick)
  • 50 g butter
  • 1 onion (finely chopped) (brown, white, yellow)
  • 2 garlic cloves (minced)
  • 1 carrot (peeled, chopped into 1cm / 1/3")
  • 4 tbsp flour (plain / all-purpose)
  • 2.5 cups milk (any fat % fine)
  • 600 g cooked chopped turkey or chicken
  • 1.5 cups frozen peas
  • 1 tsp chicken or vegetable stock powder (or 1 cube)
  • 1/4 tsp salt
  • 1/2 tsp black pepper

For the topping

  • 50 g salted butter
  • 2 cloves garlic (minced using garlic press)
  • 5 cups bread chunks (~2.5cm / 1" cubes)
  • 2 tbsp parmesan cheese (grated, optional)
  • 1 cup mozzarella or other melting cheese (shredded or sliced) (or enough slices to cover most of the top)

Instructions
 

Preparation

  • Preheat oven to 180°C/350°F (all oven types).
  • In a bowl, stir together melted butter and minced garlic for the topping. Toss bread chunks in the mixture and set aside.

Cooking

  • Heat oil in an oven-proof skillet over high heat, add mushrooms, and cook until browned (about 4 minutes). Remove mushrooms from skillet.
  • Lower heat to medium-high, melt butter in the same skillet, add onion and garlic, and cook for 2 minutes.
  • Add chopped carrot to the skillet and cook for an additional minute.
  • Stir in the flour, cooking for 1 minute until the mixture looks pasty.
  • Add half the milk while stirring to dissolve the paste, then add the remaining milk. Stir in stock powder, salt, and pepper.
  • Cook for 2-3 minutes while stirring until the sauce thickens.
  • Add turkey, peas, and browned mushrooms to the sauce, and mix well.
  • Spread the garlic bread topping over the surface, and sprinkle grated parmesan and melting cheese on top.
  • Bake for 12-15 minutes or until the cheese is golden. Tent with foil to prevent sticking, then bake for an additional 10 minutes.

Serving

  • Sprinkle with additional parmesan if desired and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 180°C/350°F until warmed through. Customize with different cheeses or herbs for extra flavor.
