Broth

  • 2 cups vegetable or chicken broth

Cooking Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced

Vegetables

  • 1 cup mixed vegetables (like peas and carrots)

Spices

  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions
 

Preparation

  • Rinse the rice under cold water until the water runs clear.
  • Cook the rice in a pot with the broth according to package instructions.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until soft.
  • Stir in the diced bell pepper and sauté for another 3-4 minutes until it begins to soften.
  • Add the mixed vegetables, cumin, paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
  • Once the rice is cooked, fluff it with a fork and add it to the skillet. Mix everything thoroughly until well combined.

Serving

  • Remove from heat, garnish with fresh herbs, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to one month. Reheat in the microwave or stovetop when ready.
