Ingredients
  

For the Seasoning

  • 1 tsp celery salt (or 3/4 tsp salt)
  • 1/4 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp mustard powder
  • 1/4 tsp mace
  • 1/4 tsp allspice
  • 1/8 tsp ground clove
  • 1/8 tsp ginger powder
  • 1/8 tsp cayenne pepper (or pure chili powder) Adjust to taste.
  • 1/8 tsp ground cardamom

For the Fish

  • 750 g fish fillets, skinless, boneless (flathead recommended)
  • 45 g unsalted butter
  • 30 g extra unsalted butter – for drizzling (optional)

Instructions
 

Fish Seasoning Preparation

  • In a bowl, combine all the seasoning ingredients: celery salt, black pepper, smoked paprika, mustard powder, mace, allspice, ground clove, ginger powder, cayenne pepper, and ground cardamom. Mix well to combine.
  • Store the mixture in an airtight container; it will keep for months.

Season Fish

  • Sprinkle the prepared seasoning generously on both sides of the fish fillets. Lightly rub the seasoning into the fish for more flavor.

Cook Fish in Batches

  • In a large non-stick skillet, melt 30g of butter over medium-high heat.
  • Cook the seasoned fish until it is golden on each side, following the cook times for your specific type of fish.
  • Remove the cooked fish from the skillet and set it aside on a plate.

Cook Remaining Fish

  • Melt the remaining butter in the skillet and cook the rest of the fish.

Rest the Fish

  • Allow the cooked fish to rest for about 3 minutes before serving, which helps to keep it juicy.

Extra Butter Sauce (optional)

  • If you prefer an extra touch, add the additional butter to the pan over medium heat, allowing it to melt and foam. Drizzle this butter sauce over the fish before serving.

Notes

Store the homemade fish seasoning in an airtight container in a cool, dry place. It will last for several months, maintaining its flavor and freshness. Mix the spices thoroughly to ensure even flavor distribution. Adjust the cayenne pepper to control spice level according to your taste. Always taste a small piece of fish before serving to check seasoning levels.
