  • 3 pieces eggs
  • a pinch pinch salt
  • 200 grams sugar (8 oz, 1 cup)
  • 60 ml vegetable oil
  • 150 ml fresh orange juice Use freshly squeezed for best flavor.
  • 1 pieces orange zest Grated zest of 1 orange.
  • 220 grams all-purpose flour (8 oz, 1 cup)
  • 1 teaspoon baking powder
  • to taste optional honey For drizzling.
  • to taste optional coconut flakes For topping.

Preparation

  • Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
  • In a mixing bowl, whisk together the eggs and salt.
  • Add the sugar and vegetable oil, and continue to whisk until well combined.
  • Stir in the fresh orange juice and grated zest.
  • In a separate bowl, combine the flour and baking powder. Gradually add this dry mixture to the egg mixture, stirring until just combined.
  • Pour the batter into the prepared cake pan.
  • Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Once cooled, drizzle with honey and top with coconut flakes before serving.

Notes

This cake is best served at room temperature. You can serve it plain or with a dollop of whipped cream. Ensure the cake is completely cooled before drizzling honey to prevent it from melting away. You can add chocolate chips or nuts for variations. Proper storage will keep it fresh for longer.
