Ingredients
  

Main Ingredients

  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can (15 oz) refried beans
  • 1 cup enchilada sauce Reserve half for pouring over the rolled tortillas.
  • 1 cup shredded cheddar cheese Feel free to mix with other cheeses for more flavor.
  • 1 cup diced onion
  • 1 cup diced tomatoes
  • 1 package flour tortillas Use gluten-free tortillas if needed.
  • 1 tsp taco seasoning Adjust seasoning to taste.
  • as needed splash Olive oil For cooking the beef.

Instructions
 

Preparation

  • In a skillet, heat a splash of olive oil over medium heat.
  • Add the ground beef and cook until browned, stirring occasionally.
  • Stir in the taco seasoning, refried beans, and half of the enchilada sauce. Mix well to combine.
  • Warm the tortillas slightly so that they become pliable.

Assembly

  • Spoon some of the beef mixture into the center of each tortilla.
  • Add a generous sprinkle of cheese, followed by diced onions and tomatoes.
  • Carefully roll the tortillas and place them seam side down in a baking dish.

Baking

  • Pour the remaining enchilada sauce over the top of the rolled tortillas.
  • Sprinkle with additional cheddar cheese.
  • Bake at 350°F for 20-25 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and serve warm.

Notes

Serve with fresh cilantro, green onions, sour cream, or guacamole. Pairs well with a light salad or Mexican rice. For longer storage, freeze unbaked Enchiritos and bake from frozen, adjusting time accordingly.
