Easy Saucy Ramen Noodles

A quick and flavorful ramen noodle dish with a rich sauce that is easily customizable with your choice of vegetables or tofu.

Ingredients
  

Noodles and Tofu

  • 2 servings dry instant ramen noodle cakes (or other noodles of choice, around 140 g total)
  • 10 oz extra firm tofu

Sauce Ingredients

  • 5-7 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional for color)
  • 2-3 tbsp corn starch
  • 1-3 tbsp sugar (maple syrup or other liquid sweetener)
  • 2 tbsp rice vinegar (white vinegar or lemon juice)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced, optional)

Vegetable Toppings

  • Veggies or mushrooms of choice (sliced) e.g., bell peppers, carrots, spinach
  • Chopped scallions (for topping)
  • Sesame seeds (for topping)

Instructions
 

Preparation

  • In a bowl, mix all the sauce ingredients until well incorporated. Adjust the measurements to taste. Set aside.
  • Boil some water in a small pot over high heat. Once boiling, add the ramen or your chosen noodles.
  • Half cook the noodles until they are still chewy, about 2-3 minutes less than the package instructions. Drain and set aside. Rinse in cold water to stop the cooking process.

Cooking

  • Heat a pan over medium-high heat and add a little oil. Sauté your chosen veggies, mushrooms, or tofu for a few minutes until cooked to your liking.
  • Give the sauce a good stir again to ensure nothing is stuck at the bottom, then pour it into the pan. Let it simmer for 2-3 minutes over medium heat until it starts to thicken. Stir continuously to prevent sticking.
  • Once the sauce has thickened slightly, add the noodles to the pan and mix well to coat them in the sauce.
  • Cook the noodles over medium-high heat for about 3 minutes, allowing them to absorb some of the sauce.
  • Taste and adjust flavors as needed with more soy sauce, sweetener, or pepper.

Serving

  • Garnish with sesame seeds and chopped scallions, if desired. Enjoy immediately while it’s hot!

Notes

For added flavor, you can marinate the tofu in a little soy sauce before sautéing. Feel free to add other seasonings such as ginger or red pepper flakes for an extra kick. If you prefer a thicker sauce, add a bit more corn starch mixed with cold water while cooking.
