Ingredients
  

Cream Mixture

  • 2 large large egg yolks
  • 2 cups heavy cream or whipping cream Can substitute with low-fat cream for a lighter version.
  • 16 ounces low-fat cottage cheese (2%) Provides a healthier take compared to mascarpone.
  • 6 tablespoons white sugar (split) 3 tablespoons for the cream mixture and 2 tablespoons for coffee mixture.
  • 1 teaspoon vanilla essence

Coffee Mixture

  • 1.5 cups strong brewed coffee or espresso Ensure coffee is strong for best flavor.
  • 2 tablespoons white sugar
  • 1/2 teaspoon vanilla essence

Other Ingredients

  • Ladyfinger cookies Quantity as needed to layer.
  • Cocoa powder for dusting Optional for garnish.

Preparation

  • In a mixing bowl, combine the 2 large egg yolks and 6 tablespoons of white sugar. Whisk until the mixture is pale and creamy.
  • In another bowl, beat the heavy cream until soft peaks form.
  • Gently fold the cottage cheese into the egg mixture, followed by the whipped cream and 1 teaspoon of vanilla essence.
  • In a shallow dish, mix the brewed coffee with 2 tablespoons of white sugar and 1/2 teaspoon of vanilla essence until dissolved.

Assembly

  • Quickly dip each ladyfinger into the coffee mixture and layer them at the bottom of a serving dish.
  • Spread a layer of the cottage cheese mixture over the ladyfingers.
  • Repeat the layers, finishing with the cottage cheese mixture on top.
  • Refrigerate for 4-6 hours or overnight to set.

Serving

  • Before serving, dust with cocoa powder for an extra touch of flavor and presentation.

Notes

Store in an airtight container in the refrigerator for up to 2-3 days. Best enjoyed within the first 48 hours. Experiment with flavors by adding coffee liqueur or orange zest.
