Ingredients
  

Brownie Base

  • 200 g unsalted butter (1 3/4 US sticks)
  • 200 g dark chocolate chips (7 oz)
  • 175 g brown sugar (loosely packed)
  • 3 pieces eggs (lightly beaten)
  • 1 tsp vanilla extract
  • 75 g plain flour
  • 30 g cocoa powder
  • 1 pinch salt
  • 180 g dark chocolate block/bar (optional)
  • 1.5 cups roughly chopped walnuts (or other nuts)

Instructions
 

Preparation

  • Preheat your oven to 180°C/350°F (160°C fan forced).
  • Spray a 20cm/8" square tin with oil and line with baking/parchment paper.
  • In a heatproof bowl, place the butter and chocolate chips. Microwave in 30-second bursts until melted and smooth.
  • Add the brown sugar and vanilla extract to the melted mixture, mixing well.
  • Add the beaten eggs, stirring until smooth.
  • Add the plain flour, cocoa powder, and a pinch of salt. Stir until combined. If using the extra dark chocolate, fold it in now.
  • Pour the batter into the prepared pan.

Baking

  • Bake in the oven for 24 minutes for gooey brownies, 28 minutes for fudgy brownies, or 32 minutes for more cake-like texture.
  • Allow the brownies to rest for 10 minutes before lifting them out of the pan.
  • Cool for at least 20 minutes before cutting.

Notes

Store them in an airtight container for up to 4 days or freeze for 3 months. Make sure not to overmix the batter; stir just until the flour is incorporated.
