  • 8 pieces Tortillas Use flour or corn tortillas based on preference.
  • 2 cups Cooked chicken (shredded) Any cooked chicken works, shredded.
  • 1 can Black beans Rinse and drain before using.
  • 1 cup Corn Frozen or fresh corn can be used.
  • 2 cups Enchilada sauce Choose your favorite brand or homemade.
  • 2 cups Cheese (cheddar or Monterey Jack) Shredded cheese for topping.
  • 1 medium Onion (chopped) Sauté for flavor.
  • 2 cloves Garlic (minced) Enhances the taste.
  • 1 teaspoon Cumin For spice and flavor.
  • 1 teaspoon Salt Adjust according to taste.
  • 1/2 teaspoon Pepper Adjust according to taste.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, sauté onion and garlic until translucent.
  • In a bowl, mix cooked chicken, black beans, corn, sautéed onion, cumin, salt, and pepper.
  • Take each tortilla and fill it with the chicken mixture, then roll and place in a baking dish.

Cooking

  • Pour enchilada sauce over the rolled tortillas and sprinkle cheese on top.
  • Bake in the preheated oven for about 20-25 minutes, until the cheese is bubbly and golden.
  • Allow to cool slightly before serving.

Notes

For added freshness, serve with a side of sour cream, guacamole, or a simple salad. You can make enchiladas ahead of time or freeze unbaked enchiladas for future use.
