Crustless Quiche – Ham and Cheese

Ingredients
  

Main Ingredients

  • 5 large eggs Approximately 50 - 55g / 2oz each
  • 1 cup cream (heavy/thickened) Halve if substituting with milk
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 100 g ham, diced Approximately 3.5 oz
  • 1 cup shredded cheese Any melty cheese except mozzarella
  • 1 green onion sliced

Instructions
 

Preparation

  • Preheat the oven to 180°C/350°F (160°C fan-forced). Grease a 22.5cm / 9" pie dish with butter or spray lightly with oil.
  • In a bowl, whisk together the eggs, cream, salt, and pepper until well mixed.
  • Scatter most of the diced ham, shredded cheese, and sliced green onion in the prepared pie pan.
  • Pour the egg mixture evenly over the ham and cheese. Top with the remaining ham, cheese, and green onion.

Baking

  • Bake in the preheated oven for about 35 minutes, or until the top is golden, and the center barely jiggles. Be cautious not to overcook to maintain a creamy texture.
  • Once out of the oven, let it rest for 5 minutes.
  • Cut into slices and serve with a simple side salad, or stuff it into soft rolls or wrap into burritos and pan-fry.

Notes

Tips: Use any leftovers, don't overbake, and experiment with flavors. Store leftovers in an airtight container for up to 3-4 days in the refrigerator, or freeze for up to 2 months.
