Ingredients
  

For the crostini base

  • 30 slices 30 slices artisan-type baguette or French stick (cut 0.5cm / 1/4-inch thick)
  • 3 tbsp 3 tbsp extra virgin olive oil Use high-quality olive oil for the best flavor.
  • to taste salt
  • 1 clove 1 garlic clove (cut in half) Rubbing garlic on the crostini enhances the flavor.

For the toppings

  • Caprese: Mix baby bocconcini, halved cherry tomatoes, and basil leaves. Drizzle with balsamic glaze before serving.
  • Smoked Salmon with Dill Cream Cheese: Spread cream cheese mixed with lemon zest and dill, then add salmon and capers.
  • Mediterranean: Top crostini with ricotta and finely chopped antipasto mix.
  • Garlic Prawn and Avocado: Cook prawns with garlic, then pile on avocado and prawns on crostini.
  • Strawberry with Goat's Cheese and Honey: Spread goat cheese, layer strawberries, drizzle with honey, and sprinkle thyme.
  • Rare Roast Beef: Spread mustard and cream cheese, add sliced beef, and top with rocket leaves.
  • Holiday Tapenade: Mix tapenade ingredients and spread them on crostini smeared with goat cheese.
  • Chili and Mint Prawns on Parmesan Pea Puree: Whip up a pea puree and top it with prawn pieces, chili, and parsley.

Preparation

  • Preheat your oven to 160°C (320°F).
  • Brush the slices of bread with olive oil and sprinkle with salt. Flip each slice and repeat.
  • Bake for 5 minutes.
  • Remove from the oven and rub the surface lightly with garlic.
  • Bake for a further 5 minutes until crispy. Let them cool before adding toppings.

Notes

Store cooled crostini in an airtight container for 2-3 days. Top just before serving to keep the bread crisp. Use fresh ingredients for the best taste and experiment with seasonal toppings.
