Ingredients
  

Main Ingredients

  • 1 pound Button mushrooms Fresh button mushrooms
  • 1 cup Breadcrumbs Can use gluten-free breadcrumbs if needed
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 tablespoons Olive oil For coating mushrooms

For the Dip

  • 1 cup Vegan yogurt or sour cream
  • 1 cup Fresh herbs (like parsley or dill) Finely chopped

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Clean the mushrooms and remove stems if necessary.
  • In a bowl, mix breadcrumbs with garlic powder, salt, and pepper.
  • Coat each mushroom in olive oil and then roll in the breadcrumb mixture until fully covered.

Cooking

  • Place mushrooms on a baking sheet and bake for 20-25 minutes until golden and crispy.
  • For the dip, mix vegan yogurt with finely chopped fresh herbs and season to taste.
  • Serve the crispy mushroom bites hot with the herby dip.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven for a few minutes to regain crispiness.
