Main Ingredients

  • 12 pieces chicken drumsticks Note 1
  • 2 tbsp extra virgin olive oil
  • 3 tsp garlic powder
  • 3 tsp onion powder
  • 5 tsp smoked paprika
  • 2 tsp black pepper
  • 1.5 tsp cooking/kosher salt
  • 4.5 tbsp plain/all-purpose flour
  • 3 tsp baking powder makes them crispier, DO NOT confuse with baking soda/bi-carb (Note 3)

For Cooking

  • 1 spray Oil spray

Preparation

  • Preheat the oven to 200°C/390°F (180°C fan-forced). Line a tray with foil and place a rack on the tray to help the underside of the drumsticks become crispier.

Seasoning

  • Mix the seasoning ingredients (garlic powder, onion powder, smoked paprika, black pepper, kosher salt, flour, and baking powder) in a shallow bowl.

Coating

  • Toss the drumsticks in olive oil. Pull the skin on each drumstick to cover as much of the flesh as possible.
  • Coat each drumstick in the seasoning mixture, shaking off the excess, and place it on the rack. Repeat with the remaining drumsticks.

Cooking

  • Generously spray the drumsticks with oil.
  • Bake for 30 minutes, rotating the tray halfway through. Increase the oven temperature to 220°C/430°F (200°C fan) and bake for an additional 15 minutes or until the skin is crispy.

Notes

Pat the drumsticks dry before seasoning to achieve maximum crispiness. Avoid overcrowding the tray to ensure proper air circulation. Adjust spices to taste.
