Main Ingredients

  • 8 oz Pasta Any type of pasta; penne or fettuccine recommended
  • 1 lb Italian sausage Ground or sliced
  • 1 cup Heavy cream For a creamier sauce, mix in cream cheese
  • 1/2 cup Parmesan cheese Grated, for garnish and mixing
  • 3 cloves Garlic Minced
  • 1 medium Onion Diced
  • 2 cups Spinach Fresh, or can substitute with kale
  • 2 tbsp Olive oil For sautéing
  • to taste Salt For seasoning
  • to taste Pepper For seasoning

Preparation

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a skillet, heat olive oil over medium heat and sauté diced onion and minced garlic until fragrant.
  • Add Italian sausage and cook until browned.
  • Pour in heavy cream and stir until it begins to thicken.
  • Add cooked pasta and spinach, stirring to combine.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a little extra cream if needed. Add crushed red pepper for heat.
