Ingredients

For the Chicken

  • 4 pieces Chicken cutlets
  • 1 cup Flour For dredging
  • 2 cloves Garlic Minced

For the Sauce

  • 1 cup Cream Can substitute with half-and-half for a lighter option
  • 2 cups Mushrooms Sliced; can mix different types for depth
  • 1 cup Chicken broth
  • 2 tbsp Lemon juice
  • 1 tbsp Dijon mustard Can substitute with yellow or whole grain mustard
  • 2 tbsp Fresh herbs Like parsley or thyme, for flavor and garnish
  • 1/4 cup Parmesan cheese Optional, for added creaminess

For Serving

  • 4 cups Mashed potatoes, pasta, rice, or roasted veggies Choose one or a combination for serving

Instructions

Preparation

  • Coat the chicken cutlets in flour, ensuring an even layer.
  • Heat oil in a skillet over medium-high heat and cook the chicken cutlets until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add minced garlic and sliced mushrooms. Sauté until the mushrooms are tender and have released their juices.

Sauce Preparation

  • Pour in the cream, chicken broth, lemon juice, and add Dijon mustard. Stir well and cook until the sauce thickens, about 3-5 minutes.
  • Stir in fresh herbs and grated Parmesan cheese, if desired.

Serving

  • Place the cooked chicken on plates, pour the mushroom sauce over the top, and serve with your choice of mashed potatoes, pasta, rice, or roasted veggies.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stove or microwave, adding a splash of water or cream to maintain sauce consistency.
