  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup Greek yogurt
  • 1/2 cup chicken broth (plus extra if needed)
  • 1 cup Parmesan cheese, grated
  • 2 cups broccoli florets (steamed or cooked)
  • Salt and pepper, to taste

Cooking Steps

  • In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
  • Add the chicken pieces to the skillet, cooking until they are no longer pink.
  • Stir in the tortellini and chicken broth. Cook according to the tortellini package directions until tender.
  • Reduce the heat and stir in the Greek yogurt and grated Parmesan cheese until combined and creamy.
  • Add the steamed broccoli and mix well.
  • Season with salt and pepper to taste. Serve warm.

Notes

Garnish with extra Parmesan cheese or a sprinkle of black pepper for added flavor. Pairs well with a simple green salad or garlic bread.
