Salad Ingredients

  • 3 whole cucumbers (standard or 2 long Telegraph/English cucumbers) Crisp cucumbers for best texture.
  • 1/2 cup red onion (finely sliced) Adds flavor and color.
  • 1/4 cup mint leaves (finely chopped or 2 tsp dried mint) Fresh mint enhances flavor.

Dressing Ingredients

  • 1 cup yogurt (full fat Greek or plain) Creamy base for dressing.
  • 2 tbsp extra virgin olive oil Adds richness.
  • 2 tbsp lemon juice Adjust based on tanginess preference.
  • 1 clove garlic (minced) Enhances flavor of the dressing.
  • 1/2 tsp salt Seasoning.
  • 1/2 tsp pepper Freshly ground preferred.

Instructions
 

Prepare the Dressing

  • Mix the yogurt, olive oil, lemon juice, garlic, salt, and pepper in a bowl.
  • Let it sit for 20 minutes to allow the flavors to develop.

Prepare the Cucumbers

  • Cut the cucumbers in half lengthwise and then slice them into thin pieces, about 3mm or 1/8 inch thick.

Combine Ingredients

  • In a large bowl, combine the sliced cucumbers, red onion, and mint.
  • Pour the dressing over the top and gently toss everything together until well coated.
  • Serve immediately!

Notes

Best served fresh. Store leftovers in an airtight container in the refrigerator, consume within one to two days for optimal crunch.
