Ingredients

Main Ingredients

  • 8 oz Pasta of choice
  • 2 large onions, sliced
  • 2 tablespoons olive oil
  • 1 cup heavy cream (or coconut cream for a vegan option) Substitute with coconut cream for a vegan alternative.
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option) Use nutritional yeast as a dairy-free substitute.
  • 1 tablespoon chili oil
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions

Cooking the Pasta

  • Cook the pasta according to package instructions until al dente. Once cooked, drain the pasta and set it aside.

Caramelizing the Onions

  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté, stirring occasionally, until they are caramelized, about 15-20 minutes.

Making the Sauce

  • Lower the heat and stir in the heavy cream. If you’re opting for the vegan version, add the coconut cream instead. Mix in the grated Parmesan cheese (or nutritional yeast) and chili oil until well combined and creamy.

Combining

  • Add the cooked pasta to the skillet and toss to coat the pasta thoroughly with the sauce. Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh parsley, and enjoy your delicious creamy pasta dish!

Notes

Don’t rush the onions: Take your time to caramelize them. Save a cup of pasta water before draining; adding it can help achieve the right sauce consistency. Enhance with fresh herbs like thyme or basil.
