Ingredients
  

Main Ingredients

  • 1/2 cup ripe avocado (smushed into the cup for measurement, or about 1/2 of a medium avocado) Make sure the avocado is ripe for the best flavor.
  • 3 tbsp extra virgin olive oil
  • 3 tbsp sour cream or yogurt (Greek or plain, unsweetened) - OPTIONAL Use as desired for creaminess.
  • 2 tbsp lemon juice Freshly squeezed is best.
  • 1 clove garlic (small, minced using a garlic crusher)
  • 4 tbsp water To thin the dressing.
  • 1/2 tsp salt Adjust to taste.
  • 1/4 tsp black pepper Adjust to taste.

Preparation

  • Combine all ingredients into a Nutribullet or small food processor.
  • Blitz until smooth.
  • Use water to achieve a pourable consistency.
  • Taste your dressing and adjust salt, pepper, lemon juice, or oil as needed.

Storage

  • Store the dressing in an airtight container in the fridge.
  • It will last for about three days.
  • Add a bit of lemon juice to slow down oxidation.

Notes

For the best flavor, use ripe avocados. You can experiment with flavors by adding herbs, spices, or different types of vinegar. Adjust thickness by varying the water amount. A dairy-free yogurt can be used for a vegan option.
