  • 2 cups cooked meat (chicken, beef, or tofu)
  • 1 cup chopped vegetables (bell peppers, carrots, and peas) Feel free to switch up the vegetables based on what you have at hand or what’s in season.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups broth (chicken or vegetable) Using broth yields a much more flavorful dish.
  • 1 cup rice (white or brown) For added flavor, you can cook the rice in broth instead of water.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon your favorite herbs (like thyme or parsley)

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onions become translucent.
  • Stir in the chopped vegetables and sauté for about 5 minutes until they start to soften.
  • Next, add the cooked meat to the pot, stirring everything together.
  • Pour in the rice and broth, then season with salt, pepper, and herbs. Stir the mixture well.
  • Bring the pot to a boil, then cover and reduce the heat to low. Allow it to simmer for about 20 minutes or until the rice is tender and has absorbed most of the liquid.
  • Once cooked, fluff the dish with a fork and adjust seasoning if necessary. Serve warm.

Notes

Serve directly from the pot for a warm presentation. Alternatively, plate individual servings and garnish with fresh herbs or cheese. Pair beautifully with a side salad or crusty bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. When reheating, add a splash of broth to restore moisture.
