  • 1 lb white fish fillets (cod, halibut, or tilapia) Use fresh fish for best results.
  • 1 tbsp olive oil For sautéing.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp red curry paste Adjust to taste.
  • 1 can coconut milk (14 oz)
  • 2 cups chicken or vegetable broth
  • 1 tbsp fish sauce
  • 1 lime Juice of 1 lime
  • to taste Salt and pepper
  • Fresh cilantro, for garnish Optional garnish.
  • Lime wedges, for serving Optional.

Instructions
 

Preparation

  • Pat the fish fillets dry with a paper towel. Season with salt and pepper, and set aside.
  • Heat olive oil in a large pot over medium heat.

Cooking

  • Add diced onions and cook until soft, about 3-4 minutes.
  • Add minced garlic, ginger, and red curry paste, cooking for another minute until fragrant.
  • Stir in coconut milk and broth, bringing to a gentle simmer.
  • Gently add the seasoned fish fillets into the soup and let it cook for 8-10 minutes until the fish is cooked through and flakes easily.
  • Stir in fish sauce and lime juice. Adjust seasoning with additional salt, pepper, or lime juice if desired.

Serving

  • Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side.

Notes

This dish pairs wonderfully with crusty bread or rice. Feel free to add vegetables like bell peppers or spinach for added nutrition.
