  • 1 lb ground chicken
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon red curry paste Adjust based on spice preference

For the Sauce

  • 1 can coconut milk (14 oz)
  • 2 tablespoons lime juice
  • Thai herbs (such as basil or cilantro) For garnish

Preparation

  • In a large mixing bowl, combine ground chicken, bread crumbs, Parmesan cheese, egg, minced garlic, minced ginger, red curry paste, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  • Shape the mixture into meatballs of your desired size.

Cooking

  • Heat a skillet over medium heat and add the meatballs to the pan. Cook until browned on all sides, approximately 5-7 minutes.
  • Once browned, add coconut milk, lime juice, and chosen Thai herbs to the skillet. Gently stir to distribute.
  • Cover the skillet and let it simmer for 15-20 minutes until the meatballs are cooked through and the sauce thickens.
  • Remove from heat and prepare to serve.

Notes

Serve over steamed rice or noodles and garnish with fresh Thai herbs or lime zest. For added nutrition, incorporate chopped vegetables like bell peppers or carrots into the meatball mixture.
