Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
  • In another bowl, beat the eggs, then add the vegetable oil and vanilla extract, mixing until smooth.
  • Fold the chopped apples into the wet mixture, then gently combine both mixtures until just blended.

Baking

  • Pour the batter into the prepared pan, smoothing it out evenly.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For serving, slice the cake into wedges and dust with powdered sugar. Add vanilla ice cream or whipped cream for extra flavor. Store in an airtight container at room temperature for up to three days, or refrigerate for about a week. For longer storage, freeze wrapped tightly.
