Ingredients
  

For the Rissoles

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs preferably fresh
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 each egg
  • 1 tbsp fresh parsley, chopped optional
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • as needed Olive oil or vegetable oil for frying

Preparation

  • In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, egg, parsley (if using), dried oregano, salt, and black pepper. Mix everything together until well combined.
  • Divide the mixture into small portions and shape them into round or oval patties (about 2 inches wide).

Cooking

  • Heat a generous amount of oil in a frying pan over medium heat. Once hot, add the rissoles and fry for 3-4 minutes per side, or until golden brown and cooked through. Make sure to cook in batches to avoid overcrowding the pan.
  • Transfer the rissoles to a paper towel-lined plate to drain any excess oil.

Serving

  • Serve hot with your choice of dipping sauce, a side salad, or on a bun for a delicious chicken burger.

Notes

For extra flavor, try adding some chopped bell peppers or herbs like thyme or basil. If the mixture feels too wet, add a bit more breadcrumbs to help hold it together. To ensure even cooking, make your rissoles uniform in size. To store leftover chicken rissoles, allow them to cool to room temperature. Place them in an airtight container and store in the refrigerator for up to 3 days. If you want to keep them longer, you can freeze them for up to 3 months.
