Ingredients
  

For the Filling

  • 1 lb ground chicken Use freshly ground chicken for best flavor.
  • 2 cups napa cabbage, chopped Crunchy and fresh, adds texture.
  • 4 pieces green onions, sliced
  • 6 cloves garlic, minced Enhances the flavor of the filling.
  • 2 inches ginger, minced Provides warmth and depth.
  • 1 tbsp soy sauce For umami flavor.
  • 1 tbsp oyster sauce Adds richness.
  • 1 tbsp sesame oil For a nutty aroma.
  • 1 tbsp chicken bouillon For added depth of flavor.
  • 1 tsp white pepper

For Assembly and Serving

  • 1 lb circular dumpling wrappers Can be found in Asian grocery stores.
  • to taste dumpling dipping sauce For serving.
  • to taste green onions (for garnish)
  • to taste sesame seeds (for garnish)

Instructions
 

Preparation

  • In a bowl, toss the napa cabbage with salt. Let it sit for 10 minutes to draw out moisture. Rinse off the salt and squeeze to release any excess water.
  • In a large bowl, combine the ground chicken, chopped napa cabbage, green onions, minced garlic, ginger, soy sauce, oyster sauce, sesame oil, chicken bouillon, and white pepper to make the filling.
  • Pan-fry a small piece of the filling for a taste test. Adjust seasoning if necessary before proceeding to fold the dumplings.

Folding and Cooking

  • To fold the dumplings, wet the edge of a circular dumpling wrapper. Place a small spoonful of filling in the center. Fold the wrapper in half, and then make three pleats on one side towards the middle, pinching to seal. Repeat on the other side, ensuring they are well sealed. Keep the dumplings covered with a damp towel as you fold the remaining ones.
  • Heat a drizzle of oil in a non-stick pan over medium heat. Add about 10 dumplings, making sure not to overcrowd the pan. Sear the dumplings for 2 minutes until the bottoms are golden brown.
  • Add just enough water to cover the bottom of the pan and steam the dumplings, covered, for 5 minutes.

Serving

  • Serve your delicious chicken potstickers with a dipping sauce, garnish with green onions and sesame seeds, and enjoy!

Notes

To store leftover potstickers, place them in an airtight container and keep them in the refrigerator for up to 3 days. For freezing, lay uncooked dumplings flat on a baking sheet, freeze until solid, and then transfer them to a freezer-safe container for up to 3 months.
