For the Chicken

For the Pasta

  • 12 oz gluten-free farfalle pasta

For the Sauce

  • 4 tbsp butter

  • 2 tsp Italian seasoning
  • 0.5 cup chicken broth
  • 2 tbsp Gluten-Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan
  • 0.25 cup pasta water
  • 0.5 tsp salt
  • 1 tsp garlic powder

Instructions
 

Preparation

  • Boil the gluten-free farfalle pasta according to the directions on the box until al dente.
  • Combine all chicken seasonings: paprika, oregano, garlic powder, thyme, salt, and pepper in a small bowl.
  • Pound the chicken breast lightly to thin it out slightly and season both sides with the mixed seasoning.

Cooking

  • Heat the olive oil over medium heat in a large skillet and sear the chicken for about 5 minutes on each side.
  • Reduce the heat to medium-low, cover with a lid, and cook for another 10-12 minutes until the internal temperature reaches 165°F.
  • Remove the chicken from the skillet and place it on a cutting board.
  • Melt the butter in the same skillet, then add shallots, garlic powder, and Italian seasoning. Stir and simmer for about 1 minute.
  • Stir in the gluten-free flour, scraping the bottom of the pan well.
  • Pour in the chicken broth and heavy cream, whisking until smooth and creamy.
  • Mix in the shredded parmesan cheese until fully melted and incorporated.
  • Add the cooked pasta to the sauce and toss well to coat evenly.
  • Gradually add the reserved pasta water one tablespoon at a time to reach your desired sauce consistency.
  • Slice the chicken breast and add it back to the pasta. Stir gently and serve.

Notes

For extra flavor, marinate the chicken in the seasoning mix for an hour before cooking. To lighten the dish, consider replacing the heavy cream with half-and-half or a non-dairy alternative. Avoid overcooking the pasta; undercooking slightly allows it to soak up the sauce without becoming mushy.
