  • 2 pieces Chicken breasts Skinless and boneless
  • 2 pieces Bell peppers Use different colors for variety
  • 1 piece Onion
  • 2 tablespoons Fajita seasoning Store-bought or homemade
  • 2 tablespoons Olive oil
  • 8 pieces Tortillas Flour or corn, as per preference

Preparation

  • Preheat your oven to 400 degrees F (200 degrees C).
  • Slice chicken breasts and the bell peppers and onion into thin strips.
  • In a bowl, toss the sliced chicken and vegetables with olive oil and fajita seasoning. Make sure everything is evenly coated.

Cooking

  • Spread the mixture in a single layer on a baking sheet.
  • Bake in the preheated oven for 20-25 minutes or until the chicken is fully cooked and the vegetables are tender.

Serving

  • Serve the fajitas in warm tortillas, and let everyone add their favorite toppings.

Notes

For extra flavor, marinate the chicken in the fajita seasoning and olive oil for 30 minutes before cooking. Use a mix of different colored bell peppers for more visual appeal and flavor. Don’t overcook the chicken; it should be juicy and tender when done. Leftover chicken and veggies can be stored in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 2 months.
