  • 2 medium Bell peppers (any color)
  • 1 medium Onion
  • 2 tbsp Fajita seasoning
  • 2 tbsp Olive oil
  • 8 small Tortillas Warm before serving
  • to taste Toppings of your choice (salsa, guacamole, cheese, etc.)

Preparation

  • Preheat your oven to 400 degrees F.
  • Slice the chicken breasts, bell peppers, and onions into thin strips.

Cooking

  • In a large bowl, toss all the ingredients with olive oil and fajita seasoning until everything is well coated.
  • Spread the mixture in a single layer on a baking sheet for even cooking.
  • Bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.

Serving

  • Serve hot with warm tortillas and your favorite toppings like salsa, guacamole, or cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep the tortillas separate from the chicken and vegetables to avoid sogginess. Use fresh vegetables for the best flavor and consider adding jalapeƱos for spice.
