  • 1 bunch asparagus
  • 1 lemon Juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt To taste
  • Pepper To taste
  • 1/4 cup grated parmesan cheese

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the chicken breast into bite-sized pieces.
  • In a bowl, toss the chicken with olive oil, minced garlic, salt, and pepper until well coated.
  • Place the seasoned chicken on a baking sheet in a single layer.
  • Trim the asparagus ends and toss the asparagus with olive oil, lemon juice, salt, and pepper.
  • Arrange the asparagus around the chicken on the baking sheet.

Cooking

  • Bake in the oven for about 20-25 minutes or until the chicken is cooked through and the asparagus is tender.
  • Remove from the oven, sprinkle with grated parmesan cheese, and serve warm.

Notes

For a beautiful presentation, serve the chicken bites and lemon asparagus on a large plate. Add a wedge of lemon on the side. Pairs wonderfully with quinoa or brown rice.
