Ingredients
  

For the stuffing

  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt to taste Salt

For the chicken

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons butter
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish Fresh parsley, for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • Cut a pocket into each chicken breast without cutting all the way through.
  • In a bowl, mix together the mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper.
  • Stuff each chicken breast with the mushroom mixture.

Cooking

  • In a skillet, melt the butter over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  • Transfer the seared chicken breasts to the prepared baking sheet. Sprinkle grated Parmesan cheese over the top of each chicken breast.
  • Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted.

Serving

  • Garnish with fresh parsley before serving.

Notes

Make sure not to overstuff the chicken pockets. You can use different types of cheese depending on your preference. Marinating the chicken in garlic, olive oil, and herbs for a couple of hours can enhance the flavor.
