Ingredients
  

Fritter Mixture

  • 2 cups fresh or frozen corn kernels Thaw and drain if using frozen.
  • 1 cup shredded cheese (Monterey Jack, cheddar, or mozzarella) Use your favorite cheese.
  • 1/4 cup scallions or cilantro Chopped.
  • 1 optional jalapeño Diced, omit if you prefer less spice.
  • 2 tablespoons lime juice

Batter Mixture

  • 1 cup flour Can use gluten-free flour as a substitute.
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup milk

For Frying

  • Oil as needed for frying Can use vegetable oil or any frying oil.

Preparation

  • In a mixing bowl, combine the corn kernels, shredded cheese, scallions or cilantro, jalapeño (if using), and lime juice.
  • In another bowl, mix the flour, baking powder, eggs, and milk to form a batter.
  • Fold the corn mixture into the batter until well combined.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
  • Remove from oil and drain on paper towels. Serve warm.

Notes

Serve warm with a dipping sauce like sour cream, guacamole, or salsa. They are also great as a side dish for any main meal. To store, keep in an airtight container in the refrigerator for up to 3 days.
