  • 2 cups Fresh or frozen corn kernels
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 1/4 cup Scallions or cilantro, chopped Optional garnishing
  • 1 small Jalapeño, minced Optional for spiciness
  • 2 tablespoons Lime juice Freshly squeezed for best flavor
  • 1 cup Flour
  • 1 teaspoon Baking powder
  • 2 large Eggs
  • 1/2 cup Milk
  • Oil for frying Cooking oil Choose vegetable or canola oil

Instructions
 

Preparation

  • In a mixing bowl, whisk together flour, baking powder, eggs, and milk until you have a smooth batter.
  • Gently fold in the corn kernels, shredded cheeses, scallions or cilantro, jalapeño (if using), and lime juice until well combined.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan. Cook until the fritters are golden and crispy on both sides, about 3-4 minutes per side.
  • Remove the fritters and drain them on paper towels to remove excess oil.

Serving

  • Serve warm as a snack or appetizer, and enjoy!

Notes

For a delicious dip, serve with sour cream, guacamole, or salsa. To store leftovers, allow to cool completely and store in an airtight container. These can also be frozen.
