Cheese & Bacon Breakfast Strata Cake

Ingredients
  

Main Ingredients

  • 300 g bacon (diced, or use ham)
  • 6 large eggs
  • 1.25 cups milk (full cream or low fat)
  • 0.25 tsp salt
  • Black pepper (to taste)
  • 7 cups any plain bread (cut into 2 cm / 1 inch cubes, preferably slightly stale)
  • 2 cups cheese (shredded)
  • Parsley (finely chopped for garnish, optional)

Instructions
 

Preparation

  • Heat a large non-stick frying pan over high heat and cook the diced bacon until lightly browned. Remove and drain on paper towels.
  • In a large bowl, whisk together the eggs, milk, salt, and black pepper until well blended.
  • Add the cubed bread, 1.5 cups of cheese, and cooked bacon to the egg mixture. Mix well and cover. Refrigerate for at least 30 minutes or overnight.

Cooking

  • Preheat the oven to 180°C / 350°F.
  • Grease a 20cm / 8 inch springform cake tin generously with butter.
  • Pour the bread mixture into the cake tin, pressing it down firmly. Sprinkle with reserved uncooked bacon and remaining 0.5 cups of cheese. Cover loosely with foil.
  • Bake for 25 minutes, then uncover and bake for another 15 to 20 minutes until golden and a skewer inserted into the center comes out clean.
  • Allow to rest for 5 minutes before removing from the springform. Garnish with parsley if desired and cut into slices to serve.

Notes

This breakfast strata can be served warm or at room temperature. Leftovers can be stored in an airtight container in the fridge for up to 3 days. For freezing, wrap tightly in plastic wrap and foil for up to 2 months.
